French: from a variant of Old French vellon ‘young calf’ used as a metonymic occupational name for a breeder or as a nickname or perhaps from a derivative of Old French veille ‘night watchman’. It may also be a habitational name from any of several places called Veillon from a derivative of Latin villa ‘country house estate’ (later used of a group of houses forming a settlement).
Shortened and altered form of French Quévillon (see Quevillon) or of its altered form Couvillon.
