Catalan (Sàbat) and French: said to be a nickname for a noisy rowdy person from sab(b)at in the sense of the old idiom ‘witches' Sabbath’. Catalan (Sàbat): from a personal name derived from Late Latin sabbatum (Greek sabbaton Hebrew shabat) ‘Sabbath’ bestowed on someone born or baptized on the Sabbath which was considered a good omen.
Jewish (Ashkenazic): artificial name from German Sabbat ‘Sabbath’. Polish, Ukrainian, and Rusyn: nickname (maybe for a sorcerer) from Polish Sabat ‘Sabbath’ (compare 1 above).
It can also be a status name of Hungarian origin for a freedman (an emancipated serf) from szabad ‘free’ (compare Szabados).
