South German: patronymic from the personal name Gerg, a variant of Georg. In part, this is a Gottscheerish (i.e. Gottschee German) surname originating from the Kočevsko region in Lower Carniola, Slovenia (see Kocevar).

Additionally, it serves as a habitational name for someone from any of several places called Sankt Georgen in Austria and southern Germany.
