It is more likely an altered form of Empson influenced by false association with the place-name as illustrated perhaps in Joseph Empson 1692, Joseph Empsom 1697, Elizabeth Epsom 1706 in IGI (Saint Dunstan Stepney Middx).

Alternatively, Epsom and Epson might be pronunciations of Ebbison, itself a variant of either Ibbotson or Hebson. Compare Margrett Ebbison 1661, Mary Eberson 1662, Jo Ebbeson 1673 in IGI (Saint Dunstan Stepney Middx).
