Probably from an unrecorded Middle English pudi ‘swollen obese’ (compare Modern English poddy) + fat ‘vessel tub vat’ (Old English fæt) for a man with a prominent paunch reminiscent of the ‘barrel-bellied’ rotund drinker mentioned under Barrell.
In the case of John de Podyfat in 1309, the de is probably an error for the definite article le.
