Need help choosing where to research in Rotherhithe, Bermondsey and Southwark

Surnames: O'Sullivan Dacey
I am going to London this week, and have never been. Hoping to find evidence of my Great Grandfather, Dennis O'Sullivan, who was born in Rotherhithe in 1872. His parents were Dennis O'Sullivan and Mary Dacey, both Roman Catholic, both of Ireland. I only know this from his military file here in Canada and his death certificate. I need to know where I should go to find his baptism, and perhaps the elders' death and burial. And maybe where Junior worked before he left for Canada in 1903. Any ideas? I have been "virtually" running all over the place and I don't have time to hit up every possible source!
So - baptism in RC church in 1872; burial in RC church 1872 - 1920; and ideas for employment records.

Can’t help you with baptism parish with the information that you have, but wonder if his mother’s maiden name could be DALY/DALEY and not DACEY ? Can see a family on the 1881 and 1891 census that MAY be yours but Dennis’s birth year is circa 1869.....siblings Norah, James and Mary, parents born County Cork, Ireland.
Did you get a copy of the marriage certificate? If not, suggest you get one via the official GRO site, much cheaper.https://www.gro.gov.uk/gro/content/certificates/ should cost £11 for paper copy or £7 for pdf. Often family members are witnesses and there should be an address and occupation for Dennis which might explain why he was so far from London.
I can see some details of Annie Bohan’s arrival in Canada....wondering why she wasn’t recorded as O’Sullivan?

Compulsory birth registration was introduced in 1875 and by that time most people did register. A birth date of 28 January 1872 should be registered in the March quarter of that year but there is no record of a Denis/Dennis O’Sullivan/Sullivan.....I looked in the June quarter as well, which would have been a very late registration. You need to know more about your man and a copy of his marriage certificate may give more clues.

I can't see a Dennis Sullivan/O'Sullivan on a passenger list to Canada in 1903,can you give us more info please- whereabouts in Canada did he end up,which ship did he sail on and from where.

If he left from England then he should appear on the 1901 census.

Do you know of any siblings that he had?

That's what he says. Hasn't helped much!
The names Denis Sullivan and Mary Dacy appear together in the marriage indexes, March 1858, Bermondsey 1d 81. Not sure that it is going to be relevant though.
